There used to be like 3 template projects to choose from when creating new one along with 2D, 3D, etc. They were about racing, football and some 2d and related to Unity Learn projects. Now I see only 2D-3Ds. Are those still available to get somehow?

Learn → Tutorial Projects ?
No, they were in the Add new project menu (with 2D, 3D, 3D with extras, etc.).
They became Asset Store assets (mostly):

Assuming you have more than one version of Unity installed:
Unity Hub - Projects - New - From the drop-down list, choose the version of Unity which you first downloaded and you should see the templates.
None of them are there…
Do you have them? If yes, what version of unity they are at? I tried to download several previous, but no luck.
Ok, it seems I figured it out. It seems these templates are only available if you clean-install Hub from Start Your Creative Projects and Download the Unity Hub | Unity (as if first time installation).
I had to uninstall hub and unity (just in case) and remove any traces of them from the application data folders.
Strange decision from Unity, imo.
