Complete utter noob here. I’m not looking to make games, all I want to do is recreate the inside of a building (like my house for instance) to walk around in, in VR. I will eventually need to make assets that can be placed in different places (similar to a sofa). This is all for work, so there’s no point in giving details, but the easiest way to put it is: I want to recreate my house and be able to move the furniture around, where can I find info/tutorials on this kind of stuff and how to do it?

You won’t find tutorials on that specifically. You’ll need to learn how to use Unity, which means starting at the Learn link at the top of this page, and working your way through tutorials there.
You’ll probably also need to learn a 3D modeling app (though if the house is simple enough, there are some in-Unity level editors that might be good enough). Many people use Blender. If you’re on a Mac, I also highly recommend Cheetah3D.

I work for a large international company that has software engineers/programmers, but we’re looking to implement AR and VR in the factory, and that is where I will come in. I’ll be brainstorming ideas and want to be able to come up with concepts, and if possible, demos.
Learning how to use Unity isn’t necessary for me, but I’d like to have a basic understanding since I’m quick at learning how to use new software. I’ll start from the the very beginning and see how it goes.

You might also look into photogrammetry. Also, you might consider using 3D depth cameras like the ZED camera from StereoLabs to create point clouds.
