Just installed Unity on Windows. Said it was installing a sample project. Where did it put it? It doesn’t show up in the open project menu and open other seems to be an invitation to search my whole hard drive…

Nope. Eventually found it in Public Documents/Unity Projects/Bootcamp demo - assuming that actually is the sample project.
Your Libraries/Documents folder is a virtual folder that contains an aggregate of both the contents of your “My Documents” and “Public Documents” folders, so it should be available there also. And yes, that is the right project.
