Say you put a iPhone down face up on a table… which accelerometer axis is it if i then twist it right or left?

None.

For playing with the accelerometer, I use one of Apple’s example applications called “Accelerometer graph”. Check it out, I think it will help you get an intuitive understanding of what’s going on.

The reason I say “none” is because if the device is laying on its back with its screen up, and you spin it, there’s no change in the direction of gravity, so the accelerometer will not pick it up.
