You can host services for your Unity game anywhere you like. Unity includes some completely optional backend services (branded as Unity Cloud) that you may use if you wish, but many Unity games don’t use them. Either way, most games host their own services of various kinds that their Unity games communicate with.
I think your question is based on a lot of underlying misconceptions about what Unity even is.
