I encountered this problem, when I assemble a project, some textures turn white. This is a problem only with wood and apple textures, others do not.

The texture you’re showing in the inspector image is a normal map. Show us the colour texture’s import setting.
Certainly weird.
What happens if you duplicate a working texture and then replace the image file in file explorer and use that texture for your apples then?
That way you could distinguish between a config problem and anything else.
Oh and what shader do you use in the material?
A standard one bundled with Unity or something special?
